General Manager - Mexico City
About the Role
La Cabra is preparing to enter the Mexican market. We are looking for a General Manager to lead the introduction, launch, and long-term development of La Cabra in Mexico.
This is a key leadership role with full responsibility for the Mexican market. You will oversee the launch of our first locations and build the operational and organizational foundation for sustainable multi-unit growth. Working closely with headquarters and local ownership, you will ensure that La Cabra’s brand standards are upheld while adapting intelligently to the local market.
This role reports to La Cabra Headquarters and requires strong alignment with our global brand direction.
Sales, Financial & Market Development Responsibilities
• Full P&L responsibility for the Mexican market
• Define and execute local growth strategy aligned with global brand direction
• Build scalable operational structures to support multi-location expansion
• Optimize service workflows, inventory management, and supplier partnerships
• Lead budgeting, payroll, and financial reporting in coordination with Headquarters
• Identify commercial opportunities to increase revenue and improve unit economics
Leadership and Team Development
• Build and develop a high-performing leadership team capable of scaling the business
• Lead recruitment, onboarding, and ongoing talent development
• Establish a culture of accountability, quality, and operational discipline
• Conduct regular leadership reviews and performance assessments
Product Quality & Brand Execution
• Ensure full compliance with La Cabra’s global brand and quality standards
• Maintain exceptional presentation and service levels across all locations
• Adapt store operations and merchandising to the local market while protecting brand integrity
• Monitor customer feedback and implement improvements
Ideal Candidate
• 5–10 years of relevant experience in hospitality, café, bakery, or multi-unit retail operations
• Demonstrated P&L ownership and strong commercial acumen
• Experience launching or scaling new locations or markets
• Strong leadership presence and ability to operate autonomously
• Fluent in English (written and verbal)
• Deep understanding of the Mexican market and regulatory environment
• Entrepreneurial mindset combined with operational discipline
